Bean count per 100 g, cocoa butter fat percentage, and free fatty acid levels are measured and published for every individual lot — not averaged across the season.
Fermentation duration in days, turn schedule, and drying method (sun or mechanical) are recorded at the cooperative level and included in the shipment file.
Phytosanitary certificate and country-of-origin documentation travel with every shipment. Full-container and less-than-container lots are both available.
